Why does Flixbus let me book Norrköping-Joensuu but not Norrköping-Helsinki when Helsinki is an earlier stop on the Hamburg-Joensuu line?
Licenses? I have regional and local buses at my city. They share some stops. But I cannot use a regional bus to move between stops inside the city, because routes inside the city are serviced by local buses.

Can you typically get prescriptions fulfilled internationally? [Specifically Germany / UK]
There is an EU project through which pharmacist will be able to consult the prescriptions that you have in that system; I am working into putting my local healthcare organization into it. That said, I do not know if the UK is involved, nor if it is already implanted in Germany so that prescriptions are already availble. If you have not tried yet, maybe you can check at any pharmacy near you to see if it is working.

Are "Albergues de peregrinos" typically restricted to pilgrims?
Some of them are run by volunteers, some of them are business (often as a side job).

Also, Spain is a rather touristic place. Probably you will be able to communicate with some of those albergues in a somewhat rusty English.

Why would you not be a pilgrim? I am not religious but went through a part of the Camino de Santiago last Spring. Got the credential card (readily available), got it stamped along the route, and that is it. Nobody asked me to go to mass, or if I was a devout. As far as I understand it, the restrictions are in place to avoid regular tourists (i.e. those that go by motor vehicle) using the facilities at the detriment of pilgrims. I would say that most of those will have no trouble hosting a hiker (specially at low season), even if the itinerary is a little odd

Is it possible to travel to USA with legal cannabis?
Legality depends on sovereignty. Which means that it does not matter which laws are in effect at the country of origin, the country of destination will just use its own laws. There will be no "oh, if it comes from Mexico it is illegal but if it comes from the Netherlands then it is legal." Prescription drugs have their own rules, but again you depend on what the destination country decides is a prescription drug and which documentation they require.

Easyjet denied EU261 compensation for flight cancellation during Crowdstrike: Any escalation or other recourse?
EasyJet's IT services are EasyJet's responsability. They cannot say "a provider did a bad thing" anymore than a restaurant can evade responsability for food poisoning because it was its provider's fault. What is relevant is what IT services were down which caused the failure; if EasyJet was working fine but the airport could not operate then it is certainly beyond EasyJey control because they have no responsability on the airport's IT.

With FlixBus, do I have to get on at the exact stop my ticket specifies if there are multiple stops in the same city?
@Hilmar At my city we have public intra-city bus and public regional bus. Regional buses are not allowed to carry people between stops inside the city; as my city is a terminal for almost all of the lines there are stops where an incoming bus will allow you to leave the bus but not to get in, and and outgoing bus will allow you to get in but no to leave the bus (because that would mean that the transport had been only inside the city).

Is there any country/case where entering with two different passports at two different times may cause an issue?
Also, even if there is no ill intent, there is always the risk of the border security officer wondering if there is something fishy about that, and performing a more extensive check on you before clearing you up.

Okay to travel to places where the locals are unwelcoming?
Spare rooms are also used for long term rentals for residents, so renting it for touristic use also impacts the market. I would frame the whole issue to "try to go to places that are legally allowed to do short term rentals."

@Edd I understand the POV and in fact I would ban short term rentals at my very touristic location. But I would frame it as "avoid unregulated short term rentals, and let the locals decide how they do want to regulate it." Granted, it is not always easy for s tourist to find out if the place is legit or not.

Using smartphone boarding pass 15 hours before flight
15 hours do mean "the day before"? Many airports close during the night, they just will not allow someone inside the safe area.

Can I bring 500 grams of gold while travelling to Canada for 2 weeks on a visit visa?
I do not think the OP is worried about physically carrying the gold with him, but what will happen at the border because of customs: is it forbidden? will there be duties? could the officers become suspicious of the OP being involved in an illegal activity? Sending the gold through shipping would not solve of any those issues; if at all, it could make the OP more suspicious by trying to avoid border controls.

What activity does this "don't do this in a Thai taxi" image refer to?
Oh yes, putting the prohibition sign solves that problem. Sounds riiiiight.

Is the signature field in the passport ever actually used for anything?
If someone asked me half a dozen examples of my signature when I was at home I think I could find them, but certainly not while I am travelling.

Nightjet Berlin-Paris: hidden clause about refund for flexible ticket!
@KristvanBesien inside the EU, for legitimate purposes, and with no sensitive (race, religion, healthcare) data, there will be no problem at all with exporting personal data. Even if it was exported outside the EU, as long as the data controller follows GDPR.
