There are trails along the entire length of the Pyrénées, which largely go parallel to the border. See the GR10 on the French side and the GR11 on the Spanish side. (It is impossible to follow the border exactly without going off-trail.)

You might want to consider doing the Birmingham-Cambridge leg by bus. National Express runs a direct bus every Sunday at 12:45 pm, taking 3h 20m. That's as fast as the train, but much cheaper and without the changes.

If you have time, I also recommend visiting Krka National Park, which is easily done as a day trip from Šibenik using public transport. Šibenik is halfway between Zadar and Split and worth visiting in its own right for its stone cathedral.

If it is within your budget, you should consider eating at Onyx restaurant, which is the only Michelin-starred restaurant that serves Hungarian food (the other starred restaurant in Budapest is more international in its offerings).
