What I actually did in the end was go through the online booking process and print out the final page before the payment page. This has the flight numbers, dates, times, total cost and the passengers names. I included these with the visa application and got the visa without any issues.

Credit cards do often offer travel insurance, usually on the condition that you purchase the travel with that card. Since I've already bought my flights and hotel, it's to late for me. I think though I'd be sceptical of anything the salesman says. I doubt he's read the insurance policy small print. Plenty insurance company salesmen will happily take my money for policies on which I can never claim.

@dlanod I haven't simply cut out elements. I've replaced them with better alternatives that a person with strong local knowledge of the area is recommending. Loch Tay is better than Loch Ness. Driving on the west coast A82 is much better than the A9 that goes Edinburgh to Inverness. There are 100 other distilleries, you don't need to go to Talasker. Dunvegan Castle isn't the best castle. My itinerary is still just a skim over the country, what else can you do if 5 days, but it covers every aspect of the country including some aspects that the original OP had missed e.g. nightlife and food.

@Stuart, yes you can do Dunvegan Castle and Talisker Distillery both in one day but you can't "Explore Skye: Trotternish Peninsula, Dunvegan Castle, Cuillin Hills, and Talisker Distillery" in one day unless you simply want to glance as the Cuillins as you drive past Sligachan hotel. If you want to see the Cuillins, you have to take a day to hike the 5 or 6 miles up the glen. If your not into hiking, or don't have the time, there are many other mountains that can be viewed easily form the road.

@Mark Mayo Given my answer was the original was not doable - unless you intend to drive a huge amount - you have to change allot. My itinary includes all the same themes as the original with less time on the road. I think day 1 is a push. Day two ends after hiking Salisbury crags with a 4 hour drive to Inverness which is taxing on your stamina, and for what? Inverness and Loch Ness, while famous, are quite dull compared to other parts of Scotland, and that's assuming you get good weather. BTW I lived in Scotland for 30 years.
