comment How do peak/off peak times work on the TfL network with the Oyster card?
Note that the specific journey mentioned, Euston to Watford Junction, benefits from contraflow off peak pricing. As shown in the Single Fare Finder, making this journey (in this direction) in the morning counts as off peak (because you are going against the flow)

"so if your card has a per-transaction overseas fee you'll pay that several times each day. " - no. You're only actually charged at the end of the day, although there may be multiple authorisations during the day.

In particular, your best bet might be one of the new Visitor Information Centres

comment Can I check the “in-travel” status of my Oyster card?
Even PAYG can be discounted on Oyster (but not yet CPAY) by adding various specific-group railcards. But yes, from the sound of it, this asker could achieve what they want by switching to CPAY.

comment Is an OysterCard worth it for occasional 1-day visits from outside London?
The marginal cost of the NR ODTC over the NR return into London tends to be much less than the PAYG cost of even a small amount of London travel.

comment Can I check the “in-travel” status of my Oyster card?
Slightly overstating things with that PPS. TfL's official position is that Oyster is going to be around for a long time yet, not least because of the many kinds of concessionary cards available for which no reasonable bank card replacement exists.
