Using an ATM is normally the cheapest way to go, unless you have an account with stunningly bad overseas fees/rates. Any reason why you don't therefore want to just use your ATM card abroad?

What time of day are you transiting through Heathrow? Heathrow has busy times and quieter times for transit. That said, T2 seems to be working well at the moment, so I'd think you'd be fine on any legal connection

Note that this would mean entering Hong Kong though, which may not always be possible, depending on your nationality and/or lack of visas. The Macau-HKG boat drops you in the international bit of the airport without having to enter Hong Kong for immigration purposes

Weight isn't in itself always the problem. Normally the killers are width and pitch. When your mother is sat down, how much space does she need from one side to the other? (Width). How much space does she need from her back to her knees? (Depth). How do those two numbers compare to the seats on those two planes?

@WGroleau As some other questions on the site explain, for many airlines you wouldn't actually want to book a one way as it'd be more expensive! Look for both one-way prices, and a return where you throw away the second leg. (Note - you must throw away the 2nd leg, not the 1st!)

I can't see anyone selling you a one-way from a small airport like FSM to Madrid for only USD $340, I think that must be a mistake. Best I can find is a return for USD $1000 from an airport near-ish FSM to Madrid on a 1+ week stay, that's using the ITA matix
