What is the biggest cultural difference between Santiago Chile and Miami? Gender roles, work ethic, typical day for someone in their 30's, 40's? What is the norm? What is totally not acceptable?

Neither Santiago nor Miami is monolithic. The "biggest" difference will vary depending on the person and the scene. – choster Jan 30 at 16:43
